{Honey Chipotle Chicken}


Sorry it's been so long since my last post. I've got something a little different and special this time.

So over Christmas break, we visited Red River, New Mexico. I've been there before, but it's been many years. The town is so small and quaint, then FILLED with skiiers during the ski season. I'm sure the locals both love them (for the business) but hate it because everything is so packed. One of those places is a lovely mexican food restaurant called Sundance, which is booked. ALL. THE. TIME. We were determined to eat there, so we made our reservations (for all NINE of us) and got there early. One of the best things on the menu is their Honey Chipotle Grilled Chicken. We ALL ordered it. Seriously. (Well, not the kids) It was WONDERFUL. A combination of sweet and hot, just fabulous. I had to make this at home. I couldn't wait until another 18 hour trip to Red River just to eat this sauce...

I whipped this up one night just to see if it would all come together, and surprisingly it did! I added some ingredients to my sauce that I know wasn't in the sauce at Red River - like Garlic. But hey - it's garlic. It makes EVERYTHING better!

My husband's remark... "It's GOURMET hot!" Love. It.




Wendy's Honey Chipotle Chicken

1 - 1 1/2 cups honey
1/2 chipotle pepper, in adobo sauce (one half of one pepper - not 1/2 can - just to be clear)
1 tsp adobo sauce
1/8 cup sugar
1 tsp italian seasoning
1 clove garlic, finely chopped

Chop the chipotle very finely. Stir into honey - this will thin it out a bit.

Over low heat, combine honey mixture with the remaining ingredients. Heat until combined and runs thin.

Salt and Pepper (to taste) Boneless, Skinless Chicken Breast and cook until juices run clear. Pour glaze over fully cooked chicken.
